Here, you will find recipes for dishes prepared for a Polish Christmas. Traditionally there are 12 meatless dishes served. There are a couple must-haves: beet broth or mushroom soup or both (beet broth is served with mushroom filled “uszka”). Pierogi fall into the “must-have” category also. Sauerkraut and mushroom filled for Christmas Eve, and meat filled for 1st and 2nd Day of Christmas. A variety of herring dishes will also be made. My family always makes chilled herring in sour cream served over hot boiled potatoes. A few other fish dishes will complete the ansamble: “ryba po grecku” and jellied fish, and also a few desserts.
