Finally, vacation time. The time of year that we wait for the most. I was going to take a break from all work (and blogging), and turn off all the screens, look at nature, read, swim, visit and vacation. Although, I’m doing most of those things, I can’t take a break from cooking, or neither do I want to.
We camp a lot, and this means depending mainly on a fire “stove” (camp fire). Taking this into consideration, I try to come prepared and prepare a menu. Mainly to keep myself from packing too much food, but also to not have to think about what to make, which is half the battle for me. I write down a breakfast, lunch and dinner menu for each day, then create a shopping list from it. First day is always easy, since we’re traveling and setting up, so it’s either sausages on the grill and a salad I made at home, or soup that was also prepared at home and just reheated. Following days depend on the weather, hot = more sandwiches and vegetables, cool/cold = more hearty stews or soups. It’s still dead of summer, so we’re eating salads, fresh garden vegetables, and sandwiches made in cast iron pie makers, aka pie irons.
Since we’re depending on cooking over fire, our pie irons come in handy. We make breakfast in them, lunch and dinner. Pizza pies are popular, we’ve also made desserts in them but today, I’m Polishing my camping kitchen and making “pierogi”. I have some leftover farmer’s cheese from breakfast, and leftover potatoes and can think of just one way to go with this combo.
To make [read: improvise] potato and cheese filled pie irons, you will need:
Camping Cheese and Potato
- Farmer’s cheese (softened and made into a thick paste by adding a bit of sour cream)
- Chives (or sautéed onions)
- Cooked potatoes
- Salt and pepper to taste
- Sandwich bread (I’m using whole wheat, but white would work great also)
- Pie irons
- Hot fire
Start a fire.
Clean pie irons.
Butter bread on one side (butter well, otherwise it will stick) and place in iron butter down.
Spread a good layer of farmer's cheese mixture onto bread (2-3 tablespoons), and a layer of cooked potatoes (mashed, cubed or sliced). Sprinkle with chives or onions, salt and pepper. Butter second slice of bread and place on top of filling butter up. Close with the second part of pie iron.
Cook over hot fire until bread is golden brown and crispy. Flip occasionally. Cooking time will depend on the heat of the fire, so watch it. Mine took about 5 minutes each side.
Take out and cool for a few minutes before eating.
