Daikon in Polish is called biała rzodkiew [bya-wa rzoh-dkyev] = white radish. It has a sharp flavor of a radish, and snowy while flesh. In this salad, combined with yoghurt, heavy cream and spices and lemon juice it tastes creamy and refreshing. I often see it being served as a part of a salad-trio in Polish restaurants. The other two are often sauerkraut salad and carrot salad or beet salad. I like it served with meat dishes, like stewed pork ribs or beef rolls or fried fish.
Daikon Salad {Sałatka z Rzodkwi}
Ingredients
- 1 daikon
- 1/4 cup of plain youghurt
- 1/4 cup of heavy cream
- Juice of 1/2-1 lemon
- 1/2 tsp sugar
- 1/4 tsp salt
Instructions
Wash and peel daikon. Shred on the largest vegetable shredder.
Place in a bowl, add yoghurt, heavy cream, lemon, sugar and salt. Mix, and taste. If too dry, add another tablespoon of cream and yoghurt. It should be pretty moist, but not soupy.
Chill until serving.

Very delicious and refreshing! I added green onion and fresh ground pepper, would add carrot or broccoli next time (though not traditional).
