Hardly ever there is any food that goes to waste in my house. I guess I’ve inherited that gene from my grandparents on both sides of the family, who were forced to respect every little bit of food that was available. Polish kitchen greatly relies on cooking with leftovers and that is what notably shaped the way we approach food, turning every little bit of unconsumed leftovers into a whole new meal.
Mashed potatoes are used in many traditional Polish dishes: kluski śląskie, kopytka, pierogi ruskie for example all call for leftover mashed potatoes. I love all those dishes, but I also love mashed potatoes and sometimes I just want to eat mashed potatoes again, and again. Reheating them a microwave just does not do them justice, don’t you agree? I’m showing you today how to take a cold lump of yesterday’s food and turn them into a star again. You will never throw away leftover mashed potatoes again.
How to Reheat Mashed Potatoes - Polish Style
- Leftover mashed potatoes
- 1 onion (for every 4 cups of potatoes)
- 2 tbs of butter
- 2-3 strips of smoked bacon (optional)
Heat butter in a medium skillet and add chopped onion. (If using bacon, add bacon to the pan - no butter needed. Sauté for a few minutes to release some of the fat, than add onion). Sauté until golden brown around the edges.
Add mashed potatoes and break up to soften and mix in with onion (and bacon). When evenly spread, turn heat to medium-low and walk away. Do not touch, turn, mix, stir. Let sear for a 3-4 minutes until the bottom turns golden brown. Mix to bring the bottom up and sear again.
Serve however you serve mashed potatoes.
