Easy Polish Cabbage Salad {Surówka z Kapusty}

This super quick and easy Polish salad can be found on our table year-round. Cabbage, one of our all time favorite vegetables takes on a healthy form of a salad, mixed with carrot and apple. This is a great side dish to accompany a meat-and-potatoes kind of dinner, a “schabowy“, or “mielony” for example.

This salad can also be found as one of the components of a “salad mix”, a variety of salads that many restaurants serve with dinner. Salad mix can consist of: sauerkraut slaw, carrot salad, beet salad, leek salad, mizeria {cucumber salad} or more.

How to prepare Polish cabbage salad – recipe video

Cabbage Salad {Surówka z Kapusty}

  • Yields: 5-6 servings
  • Prep Time: 15 min

Ingredients

  • 1/2 head of small cabbage (about 4 cups shredded)
  • 1 carrot
  • 1 apple
  • 1/4 of a medium onion, minced
  • 1/2 tsp of sugar
  • Pinch of salt
  • Juice of 1/2 a lemon

Instructions

  1. Thinly shred your cabbage into thin slices (go as thin as you can), use a food processor, if you have.

  2. Place shredded cabbage in a mixing bowl, sprinkle with salt and mix with hands squeezing the cabbage to soften it and to release the juices.

  3. Shed carrot and apple on a vegetable grater and add to the mixing bowl with salad. Add onion. Sprinkle with sugar.

  4. Mix well and let sit for a couple of minutes to let the salt and sugar dissolve. Mix again and refrigerate until serving.

  1. I just made this because I’m trying to make a bunch of little healthy things ready to grab in my fridge that won’t make us gain weight. Lol and this is so delicious! My husband and I are standing here eating it and i literally just stirred it up. I know it’s going to be even better tomorrow. Thanks for the recipe it’s wonderful!
