Famous Polish Easter soup żurek served by Polana.com
Hello my hungry friends,
Easter is almost here and I am starting to think about my menu. Not much change from last year, but some dishes require a bit of planning ahead of time. As you know, us Poles, we are pretty consistent with our holiday menu.
Nevertheless, I alway look forward to our culinary part of the Easter celebrations. First up, żurek! Żurek is a soup made from sour rye starter, aromatic fresh pork sausage, smoked bacon, some fresh veggies, garlic and marjoram. Sausage and bacon will make a full-bodied base for the soup and give the distinctive flavor. Sour rye starter will provide the tanginess and originality to this one of a kind soup.

Fabulous soup! I used a zur from a different Polish importer, and will make my own next time. (I think theirs was meant for rye bread.) Perfect balance of sour and salty. I liked the eggs and horseradish in mine. Good thing the local Polish deli has white sausage – I think I will make this fairly often!
