Rice with Apples {Ryż z Jabłkami}

Ryż z jabłkami [rysh z jabw-kah-mee] is a flavor of my childhood. The earliest memory I have of eating it  is when I was 3 or 4. I attended preschool near our apartment and it was often served for breakfast or an afternoon snack.

Kindergarten had a full kitchen, and prepared all of our meals on the spot. Everything you can think of, as far as Polish kitchen goes. I don’t remember many picky eaters, but I do remember us liking some dishes more than others. Naleśniki and rice with apples was on our favorites’ list. What’s not to like? Warm apples, soft gooey rice with cinnamon and vanilla. This is a winner in every child’s menu.

Rice with Apples {Ryż z Jabłkami}

  • Yields: 6-8 servings
  • Prep Time: 15 min
  • Cook Time: 30 min

Ingredients

  • 2 cups of rice
  • 4 cups of milk
  • 1/2 tsp of salt
  • 4 sour apples
  • 1/4 tsp of ground nutmeg
  • 2 tbs of sugar
  • 1 /12 tsp of cinnamon
  • 1 tsp vanilla
  • 2 tsp + 2 tsp butter

Instructions

  1. Heat milk with salt in a medium pot. Add rinsed rice and simmer on low until cooked (follow instructions on the packaging). Stir rice often. If it sticks to the bottom, do not scrape it off. Keep stirring gently until rice is cooked. You may have to add a bit more moisture, if so, add 1/2 cup at a time (milk or water will do). Rice mixture should be moist but not watery.

  2. Preheat oven to 350℉ / 180℃.

  3. Peel and core apples, and shred them on the vegetable shredder. Add to a dry pan with nutmeg and cook until liquid cooks out (about 5 min).

  4. When rice is cooked, add sugar, cinnamon and vanilla. Stir well.

  5. Grease a 8 x 8 inch (20 x 20 cm) pan with butter. Add half of the rice to the bottom of the pan, then all of the apples and the rest of the rice. Top with thin slices of butter. Bake for 20 min. Serve hot or cold.

Notes

You may also bake rice in individual dishes for ease of storage or serving.
