Weight Loss Cabbage Soup {Odchudzająca Zupa z Kapusty}

This rather unorthodox cabbage soup recipe is only a few decades old. Odchudzająca [od-hoo-dzah-yow-tsah] means “slimming”, this soup was marketed in Poland as a miracle soup for anyone who was trying to shed any access pounds. You can only eat IT, but as much as you want for a couple of days and then supplement with other steamed veggies, lean meats and fish and healthy oils for the next few. I haven’t tried losing weight with it, but since we’re all just getting over the overindulgence of the holidays, I thought we could all use a little cleansing. It is originally made without any spices, but I cannot have food without that. So I’m adding salt, peppercorn and other goodies.

Despite the fact that it is just a basic vegetable stock, the soup provides a nice fresh taste. It is heavy on cabbage and onion taste, but the bell pepper and celery is also relatively visible. It is a breath of fresh air after a meat-heavy holiday season.

Diet Cabbage Soup {Odchudzająca Zupa z Kapusty}

  • Prep Time: 10 min
  • Cook Time: 20 min

Ingredients

  • 1/2 of a medium cabbage
  • 3 onions
  • 1 red bell pepper
  • 3-4 celery stalks
  • 4 ripe tomatoes or 1 can (14.5 oz) of stewed tomatoes
  • 8 cups / 2 liters of water
  • 2 tsp of salt
  • 3-4 bay leaves
  • 5-6 whole peppercorns and allspice seeds each
  • Parsley for garnish

Instructions

  1. Dice vegetables into uniform cubes. Place in a pot with water and spices. Boil on low for about 10-15 minutes, or until all veggies are soft.

  2. Taste. Add a bit more salt, if needed. Serve garnished with parsley.
