Polish Tomato Sauce {Sos Pomidorowy}

Classic Polish tomato sauce is a bit different from what I’ve had here in America. We clearly don’t use any Italian herbs, so it may be a bit different from what you’re used to. Tomato sauce is creamy and smooth, with dynamic tomato flavor. It is a top favorite sauce for gołąbki, but also other meat dishes, like kids favorite: pulpety. I can also just eat it with crushed potatoes, a plate full of comfort food right here 🙂

Polish Tomato Sauce {Sos Pomidorowy}

  • Yields: 6-8 servings
  • Prep Time: 5 min
  • Cook Time: 20 min

Ingredients

  • 1 can (14.5 oz / 410 ml) of diced or stewed tomatoes
  • 1.5 cups / 400 ml of chicken or vegetable broth
  • 3 tbs of tomato paste
  • 1/2 tsp of salt
  • 3 bay leaves
  • 5 each peppercorns and allspice (whole)
  • 3 tbs of heavy cream
  • 2 tbs of butter

Instructions

  1. Blend tomatoes with tomato paste, broth and salt. Transfer to a medium saucepan, add spices and simmer on medium-low for about 15-20 min.

  2. Turn off, add heavy cream and butter. Taste, add salt, if needed.

Notes

Take out peppercorns, allspice and bayleaves before serving, if you wish. I like to leave it in and wait who's going to bite into one first. 😉

  1. I made this sauce to go with my gołabki last night and it was incredible! I was cooking for five men, two of whom have never had Polish food, and they raved about it. Thank you so much for this recipe. I’ve been looking for just the right sauce for my gołąbki and I finally found it!

  2. This is the recipe I’ve been searching for! As a kid we always had our grammy’s goľąbki doused with ketchup! And I’ve been spelling it incorrectly as ‘galumpki’ for years 😮 I really appreciate what I’m learning here as a Polish-American dependent without a living family member to teach me beyond what I remember as a teen.   3. I’ve make this recipe from you before and my Polish hubby loves it. Said it’s better than his mothers. (Bonus points!) This weekend is his birthday and he wants golabki so I had to find this recipe again. I’m scatter brained LOL it’s okay it’s part of my hmm… charm?. Anyway now armed with both of your recipes I will be channeling my inner “Anna”! I will be doubling your sauce recipe that was the mistake I made last time I only made one batch.   4. As I got older; I got lazier. I use passata instead of stewed tomatoes. Polish sauce has a sweeter flavour than Italian. Everyone likes it.

    1. Our neighbor gave us 4 huge boxes of beefsteak tomatoes from his farm. I’ve been breaking them down all week, blanching, peeling, juicing, seeding (well enough) and straining. I took 7 quarts from this haul and am currently simmering Anna’s sauce in a double batch. Can’t wait to see how it turns out vs the can of stewed/diced tomatoes I’ve done before!
