Cabbage Roll Soup {Zupa Gołąbkowa}

Cabbage roll soup {zupa gołąbkowa} is a relatively young recipe in Poland. I’ve heard of it once or twice while browsing through groups dedicated to Polish food. I think the idea is brilliant. A bit complicated recipe for cabbage rolls {gołąbki}: ground pork and rice mixture rolled into steamed leaves of cabbage now becomes a simple dish that can be made in under an hour. What’s not to like?

I took a jab at making this dish my own. Watch me improvise and learn with me. The soup tastes exactly how gołąbki do. Quick and delicious. Again, brilliant! 

Cabbage Roll Soup {Zupa Gołąbkowa}

Cabbage Roll Soup {Zupa Gołąbkowa}

  • Yields: 10-12 servings
  • Prep Time: 15 min
  • Cook Time: 1 hr

Ingredients

  • 1 tbs of oil / lard
  • 15 oz / 400 g of ground pork
  • 3 garlic cloves
  • 2 bay leaves
  • 5 - 6 peppercorns and allspice berries
  • 2 tsp of salt
  • 1 tsp of ground pepper
  • 2 carrots
  • 1 parsley root or parsnip
  • 3 tbs of tomato paste
  • 15 oz / 450 ml of tomato sauce
  • 8 c / 2 l of water or stock
  • 1/4 c of white rice
  • 1/4 head of medium cabbage (about 5 c)

Instructions

  1. Heat oil in a large stock pot. Add ground meat and garlic and saute for a few minutes with bay leaves, allspice and pepper corns, salt and pepper.

  2. Add peeled and sliced carrots and parsley root, tomato paste, tomato sauce and water/stock and cook for about 10 minutes. In the mean time chop cabbage.

  3. Add rice and cook until rice is fully cooked (check the packaging for time). Add cabbage and simmer for additional 5 minutes, or until cabbage is soft.

  4. Taste, add a bit more salt if needed.
